In Germany, cacao cannot be sold untreated. It is thermally treated – through roasting or steam – to reliably kill germs, mold spores, and bacteria.
This ensures food safety and makes the cacao well-tolerated.

"Raw" means:

  • No chemical alkalization
  • Gentle processing at the lowest possible temperatures
