Without this step, cacao would be bitter and indigestible. Therefore, there is no completely untreated cacao, even if it is called "raw."
Safety First: Why Sterilization is Important
In Germany, cacao cannot be sold untreated. It is thermally treated – through roasting or steam – to reliably kill germs, mold spores, and bacteria.
This ensures food safety and makes the cacao well-tolerated.

- Gentle processing at the lowest possible temperatures
